Typical Kerala Kumbil Appam recipe  in Kottayam style





Kumbil Appam in Kottayam Style 

Kumbil appam is a  typical Kerala snack food made with Jack fruit(brown paste form in which all water contents are extracted)rice flour,jaggery and coconut.Everything mixed together and fill it into a cone shaped leaf mold specially for making this snack.After that it gets steamed for 30 minutes.Delicious Kerala snack is ready to be serve.


Ingredients Needed

1.Brown Jack fruit paste- 1.5 cups(it is made with over ripe jack fruit and jaggery by continuous mixing for hours depends upon the quantity).This process is called Vilayikuka in Malayalam.
2.Jaggery - 1 cup
3.Rice flour - 1.5 cup
4.Coconut + few cardamom pods = 1 cup
5.Hot water - as needed.

Method

1.Combine rice flour with hot water and make it a  soft dough.
2.Mix all other ingredients,combine it and make a good loose batter.
3.Make cone shaped mold using leaves and fill it with batter.Steam it for 30 minutes.
4.Serve it hot or cold.
