                                           Crunchy Apple Oats Mini Muffin



Muffins are super soft cup cake like sweet item  which we can have as a break fast or an evening snacks.Muffins are mot much popular in Kerala or India.But its quite common in western world as breakfast food.So many varieties of Muffins are available here in shops and can be prepared easily at home by simple baking.Everybody likes it when it is coming from the home oven.For making Muffins we can use any fruits or fruit juices or jams with the baking flour with different toppings.Here i'm giving a simple recipe with Apples and oats.This is popular during Fall season when lots of apples are available and some times when we had a chance for picking apples by our hand.Last year we went for Apple picking in a farm.It was an awesome experience.)

Coming to my Muffin recipe,we are using all items for normal cake baking only exception is we are using muffin pans for baking.


Lets talk about the ingredients and methods of preparation.





Ingredients
1.All purpose flour(Maida)-1.5 cups
2.Powdered Sugar -1/3 cup
3.Brown Sugar -1/3 cup
4.Baking Powder -1/2 Tsp
5.Baking Soda-1/2 Tsp
6.Cinnamon Powder - 1/2 Tsp
7.Salt- 1/4 Tsp
8.Butter/oil-1/2 cup
9.Egg- 1
10.Apple - 1 ( peeled and chopped)
11.Vanila Extract - 1 Tsp

Step by step Method
Here i used Gala Apples.You can use either Gala,Honey crisp or Granny Smith Apples.These are more sweet in taste  and tastes crunchy even after baking.Instead of fresh apples you can use apple sauce available.
                                       

               1.Here i mixed all  ingredients together except egg ,flour -1.5 cups,,baking soda and baking powder,salt,oil or butter .Mix it carefully in a bowl.Then add cinnamon powders and 2 sugars.

                                                              
                            
2.Add 1 Tsp Vanilla extract to the whole mixture


3.Add 1 beated egg to the above powder mix and make a good batter using a whisk.



4.Add 1 cup of fresh peeled and cut apple pieces into the batter.


5.Preheat the oven to 350 Deg F  and set the muffin/cup cake  baking pan.Fill 1/2 of the cup cake  holder with the batter and add Oats with  powdered sugar as toppings.






6.Place the tray into the preheated oven and set the temperature as 350 deg F and bake the muffin for 15- 20 minutes.Insert a tooth pick  at the centre of 1 or 2  muffins and check whether if  its coming clean.If its clean the muffin is good to go with tea.




Crunchy Apple -Oats mini Muffins are ready to serve.


Tips
1.We can prepare muffins within a limited time if all ingredients are available at home.
2.Can use any fresh fruits or chocolate chips as toppings.
3.I simply added Oats for healthy purpose.
