Chakka pazham Varattiyathe/Chakka halwa recipe#Thani nadan recipes


Chakka pazham halwa or varattiyathe is a sweet dish or it can be added with coconut and prepare many other thani nadan recipes like rice chakka balls,chakka ada,or even payasam and kumbil appam.It can be stored in freezer for almost 1 year and can make chakka recipes all time of the year.My paternal grandma used this preservation method with ripe chakka and make kumbil at any time of the year when our family meets together at tharavade.(Grand parents home)



Ingredients Needed


  1. Over ripe Jack fruit (chakka pazham)  - 3 cups
  2. Jaggery - 1/2 cup
  3. Ghee - 2 Tb sp
  4. Cardamom powder - 1 Tsp
  5. Water - 1/4 cup
  6. Big Vessel (Uruli) - 1

Method

  • Clean  ripe fruit  from its seed and chop it into small pieces.
  • Make a smooth paste of it by grinding in a mixxie.
  • In a pan make jaggery syrup by adding 1/4 cup water.Stir continuously until all solids melts and stir it.When it cools down,strain the jaggery syrup and keep aside.
  • To a hot heavy bottom vessel,add 2 Tb sp ghee and add the ground paste and stir continuously and cook it.Stir continuously that is the main step for this recipe.
  • Add strained jaggery syrup  and cardamom powder to the chakka mix and well combined.Mix continuously and cook it in low- medium flame until it doen't sticks to the sides of the pan and forms a ball like consistency while mixing with steel laddle.
  • Transfer this halwa to a desired bowl for molding and keeps aside for cooling.
  • Use as such or else prepare different recipes with this chakka varattiyathe as it has longer shelf life in freezer.

Tips

  • Prepare kumbil appam,chakka pradhaman,Chakka rice balls with this halwa.
