Baked Veggie Cheese Balls



Vegetables are healthy and as parents we know how to incoporate veggies in our kids diet.We have so many tricks to add veggies with their favourite dishes.Yes,Here I'm giving a good recipe which was tested and liked by my Kindergartner who is a picky eater in terms of vegetables.He likes carrot so i have added carrot to this Zucchini cheese balls recipe.Also he helped me mixing the veggies and he was excited and waited for the baking time to taste this cheese balls.Anyway Do try it with your kids and I'm sure they likes it and it's a good option as school lunch box snack with their favourite sauce.Also we are baking this balls.Guilt free and Gluten free snack for your loved ones.Let's see the Ingredients and Method of preparation

Ingredients Needed

  • Vegetables like Zucchini and Carrot - 1 each
  • Shredded Mozzarella Cheese - 1/2 cup
  • Bread crumbs - 1/2 cup
  • Egg - 1
  • Pepper powder - 1/2 Tsp
  • Garlic powder - 1 Tsp
  • Italian Seasoning- 1/2 Tsp(optional) I didn't use
  • Salt - 1 pinch
Method
  1. Grate 1 cleaned Zucchini and 1 carrot using a grater or food processor.
  2. Keep this in a bowl and add pinch of salt and set aside for 15 minutes.Water and all moisture ooze out from the vegetables.
  3. Squeeze out water from vegetables as much as possible by using a clean cotton cloth or muslin cloth.
  4. Add 1/2 Tsp Black pepper powder,1 Tsp garlic powder,1 egg,1/2 cup Mozzarella cheese and 1/2 cup bread crumbs.
  5. Mix nicely with a spoon.You can ask your little ones help for mixing for fun if they likes cooking.
  6. Pre heat the oven to 400°F/200°C degrees.
  7. Make small balls out from the vegetable cheese mixture and keep it in a baking tray lined with parchment paper or aluminium foil coated with oil.
  8. Bake in the pre heated oven for about 20 minutes.
  9. Broil 1minute at the end to brown the balls to get the fried effect.Be careful do not burn it.(purely optional).
  10. Serve  warm with your favourite sauce.

Notes
  • You can add Vegetables like beetroot, Pumpkin or Spinach(evenly chopped)of your choice.
  • Also any shreeded Cheese of your choice.
  • Add herbs of your choice like garlic,dill,parsely,oregano or cilantro.
  • Also you could coat the baked cheese veggie balls in honey or any sauce which you like.
  • But for kids its better to avoid extra sauce as its too salty and conatins preservatives.
