Vendaykka Kichadi for Sadhya



Vendaykka(malayalam) or Okra kitchadi can be prepared quickly within 5 - 10 minutes for a grand sadhya.

Ingredients

1.Okra or ladies finger - 5-7 nos
2.Shallots -3 nos
3.Salt - to taste
4.Curd/Plain yogurt - 1 cup
5.Green Chilli-     1

 For Seasoning
7.Dry Red Chillies 1(optional)
8.Curry Leaves - a few
9.Mustard - 1/2 Tsp
8.Coconut Oil - 2 Tb sp

Method
1.Clean and cut okra into small round pieces.Add lit salt and fry it in coconut oil and keep aside.
2.Add mustard seeds and curry leaves to the same oil.When it pops,add Cut shallots and fry it in the same oil along with some chopped ginger and green chilli.
3.Add fried okra to this mixture.switch off the flame and allow it to cool for 10 minutes.
4.After cooling,add 1 cup of thick curd to the fried vegetables.Mix it and kitchadi is ready to be served with Matta rice.

This is an easy way of making Kichadi for youngsters and busy people.
