Banana bread - taste of banana in each bite
I must say the taste of this banana bread is simply fabulous and it is an all time favorite in my house.This time i baked this for my mother and she simply loved it.Mummy is planning to make this when she is back to home.
I'm sure everybody likes this tasty bread and here i have added some tutti frutti which gives the taste of our old fruity bread which we all loves in our childhood days.So here is the ingredients and method.
Ingredients
- All purpose flour/maida - 2cups
- Baking powder - 1 tsp
- Baking Soda - 1/2 tsp
- Salt - 1/4 tsp
- Cinnamon - 1/4 tsp
- Nutmeg powder- 1/8 tsp
- Eggs - 2
- 1 cup mashed banana(almost 3-5 bananas)
- Sugar - 1cup
- Oil/butter - 1/2 cup
- Chopped nuts/tutti frutti - 1/4 cup
Method
1.Measure the flour using a measuring cup and add to a mixing bowl.
2.Add 1 tsp Baking powder and 1/2 tsp Baking soda to the measured flour and sift the dry powders using a fine sieve in order to mix all the dry ingredients properly.
3.Take another bowl and add 1/2 cup of butter(melted) or oil and 1 cup of powdered sugar.Mix sugar and butter using a whisk or hand mixer.
4.Add eggs 1 by 1(1 at a time) to the sugar - butter mixture and mix properly.
5.When all the eggs are mixed thoroughly add 1 tsp of Vanilla extract and mix using a whisk.
6.When the liquid ingredients are mixed properly,add the measured dry powders to the egg-butter-sugar mixture.
7.Mix the powder slowly and carefully to form a batter.Don't mix too much.
8.Mash bananas in a mixer or blender and add to the batter mix.

8.Mash bananas in a mixer or blender and add to the batter mix.
9.Coat tutti fruity with flour in a bowl and add it to the bread batter.
9.Now Preheat the oven to 300 to 350 Degree F for 5 - 10 minutes.
10.Grease(apply butter)to an Oven safe dish(long dish). Also apply butter using a brush evenly to the sides of the dish.Add some all purpose flour or maida to the greased dish and make it even.Remove the excess dust by tilting the dish.
11.Add the prepared bread batter first to the dish and spread it evenly with a spatula or knife.
12.Transfer the batter dish to the preheated oven and bake the bread for at least 45 -60 minutes at 300-350 Degree F.
13.After 60 minutes,use a toothpick to check whether the bread is done.If the tooth pick comes out clean it means the bread is well baked.Try to insert the tooth pick at the center of the bread,because center portion needs more time to bake.
14.Enjoy this banana bread with tea or coffee or even you can use with cereal as break fast.
Tips
1.Measure the dry powders correctly,its the key point of making a good cake.
2.Add and whisk eggs(one at a time).You can add grated dried orange peels into the egg mixture in order to avoid the smell of eggs even after baking.Try to keep some orange peels in a bowl.So that you can use it effectively.Also instead of orange,try with lemon zest.Lemon also works best for smell.
3.Pre heat the oven when all batter is ready.No need to pre heat at the beginning before you start.So after pouring the batter to the dish,you can place it.
4.After adding the dry powders to the egg-butter-sugar mixture,mix everything very gently and softly and do not mix for long time.
5.After pouring the batter to the dish completely,try to tilt the dish to all the four sides,to avoid and reduce the formation of air bubbles/space in the batter.This will help to avoid the breakage of cake at the center when it is done.
9.Now Preheat the oven to 300 to 350 Degree F for 5 - 10 minutes.
