                                              Koorkka Ularthiyathe




I love Koorkka or Chineese potato stir fry or Koorkka mezhukupuratti.Its a good combination with rice and could prepare using meat masala and have during lent season instead of non veg recipes like beef ularthiyathe.


Ingredients 

1.Koorkka or Chineese Potato - 1/2 Kg
2.Small shallots - 10-15 or use 1/2 Onion sliced.
3.Garlic - 3-4 chopped
4.Ginger - 1 small piece chopped 
5.Coconut bites(Thenga kothe) - 1/4 cup
6.Turmeric powder - 1/4 Tsp
7.Meat masala - 1 Tsp
8Green chillies - 2 chopped
9.Mustard seeds - 1 Tsp
10.Curry leaves - 2 sprigs
11.Coconut oil - 2 Tsb sp
12.Salt - to taste.
13.Water - 1 cup


Method

1.Wash and clean koorka by using a peeler for removing its skin.Soak in water for 30 minutes which helps in easy peeling of its skin.
2.Cover and Cook the cleaned koorka with salt and turmeric powder in a pan.It takes some time to cook this koorkka.So  cook in pressure cookker for 1 whistle.Quick release the pressure,other wise it may over cook.
3.  Heat oil in a pan and add the mustard seeds. When it crackles add  curry leaves and shallots or sliced onion.
4.When it turns brown add  all masala powders and coconut bites and fry for 2-3 mins in low flame. Mix well.
 5.Add cooked koorka with some hot water.Check the salt and add if needed.Cook it on low flame for another 10 minutes.

Notes
  • While cooking Koorkka you will get the nice aroma of meat.So its best in the time of lent and you guys must try this during lent season.
