Mutton dum biriyani easy recipe
Easy Dum Mutton Biriyani.Biriyani is the most popular recipes of India has many stories related to its origin in Mughal period.
Lots of varieties of biriyanis are available in India.Here i'm giving you the explanation of Simple Mutton Biriyani.

Let's begin Ingredients Needed for Marination of Mutton
1.Mutton - 1 Kg 2.Chilli powder - 1 Tb sp 3.Turmeric Powder ` - ½ Tsp 4.Meat Masala - 1 1/2 Tb sp 5.Garam Masala - 1 Tsp 6.Ginger Garlic Paste - 1 Tb sp 7.Coriander & Mint leaves - 1 handful 8.Salt - to taste
Ingredients Needed for Rice preparation.
1.Rice - 2 cups 2.Water - 4 cups 3.Lime juice - 1 lime 4.Cinnamon - 2 medium sticks 5.Clove - 6 6.Cardamom - 2 7.Black Pepper - 6 8.Bay Leaves - 2 9.Star Anise - 1(optional) 10.Cumin seeds - a few(optional) Ingredients Needed for Biriyani masala mix 1.Onion - 3 total and slice 1 onion into thinly sliced for caramelizing. 2.Tomato - 1 3.Green chillies - 2 4.Meat masala - 1 Tsp 5.Garam masala - 1 Tsp 6.Salt - as needed. 7.Cashews - 1 handful 8.Raisins - 1 handful 9.Mint and cilantro chopped - 1 cup each 10.Saffron mixed with warm milk - 1/2 cup(optional) For this biriyani, I'm using already cooked mutton pieces.You can see the link for mutton recipe here. Or else pressure cook the marinated mutton before adding to the biriyani gravy. Note : Keep all the ingredients ready in bowls. Cashews, raisins, Sliced onion, chopped tomatoes, all spices and cooked mutton for time saving.

Step 1: Wash and Clean Basmati rice and soak in water for 20 minutes.Wash 2-3 times before soaking until water becomes clear.When Water is clear, soak rice for 20 minutes.
Step 2: Fry sliced onions, cashews and raisins in ghee. Slice 1 onion into thin long slices and remaining 2 into small pieces.
Fry cashews in warm ghee and oil mix.Fry raisins in the same ghee . Fry sliced onion into golden brown.Add more oil if needed. Transfer those fried onion to the bowl.
Note : Prepare rice in one pan on one side and make biriyani masala in another pan at the same time for time saving. Also boil water in a vessel with all spices while rice is soaking as time saver, if you don't have time for cooking.
Step 3: Drain the rice and cook in boiling water with all spices, salt and lime juice.Drain the soaked rice after 20 minutes.Too much soaking breaks rice into small pieces while cooking.Add all spices to the boiling water.Add enough salt and 1 Tb sp Lime juice to the boiling water.
Step 4: Mean while prepare biriyani masala mix with onion, tomato and green chillies + masala powders. Saute remaining 2 onion slices in oil until it becomes translucent.When onion turns brown, add chopped tomatoes and green chillies and saute it. When water gets boiled, add soaked rice carefully.Stir it nicely. cover and cook the rice. Add 1 Tsp Garam masala and 1 Tsp Meat masala and 1 Tsp chilli powder if you need more spicy mutton.saute it well until well combined.
Step 5: Add already cooked mutton pieces to the biriyani masala mix.Add previously cooked Mutton pieces to the biriyani gravy mix.Cover and cook in low flame until all masalas coating nicely to the mutton.
Step 6: Drain half cooked rice and keep aside.Mean while rice has cooked in 3/4 th level,as you can see it can break into pieces and also rice is bent shaped.Drain the rice using a colander and keep aside.Mutton is coated with masala and turns as a good gravy.Check salt and add only if needed.
Step 7: Divide mutton gravy and half cooked rice in equal parts and layer it in biriyani pot or the pan where you cook masala.Transfer half of the mutton and gravy to another bowl. Cover half of the cooked rice to the mutton pieces and layer it. Add half of the fried onion,cashews and raisins.Add half of the chopped cilantro and mint leaves.Add remaining Mutton pieces and gravy and makes the second layer. Add balanced rice,fried cashews,onion,raisins and chopped mint and cilantro and forms a good top layer. Add soaked saffron in warm milk at this point for extra colour. (I forgot to add it).
Step 8: Cover the pan with aluminium foil or dough and do dum process.Cover the pan with a good aluminium foil and cover it with a good tight lid.Place a good Iron tawa or non stick pan in bottom.Keep it in high flame for 5 minutes.Keep the biriyani pot on the top of that iron tawa and keep in low - medium- flame and cook(DUM) it for 20 minutes.
Mean while prepare raita and fry pappad.
After 20 minutes of DUM process,Biriyani is well cooked and fluff the rice using a fork and mix it gently.Mix with masala and pieces for getting a nice appeal.Serve warm with raita,pickle and pappad.
