Beef Ulathiyathe/Beef Roast Recipe
Beef Ulathiyathe/Beef Roast...There is no need of description for this recipe.Its a common dish in all Christian families in Kerala.This is a traditonal recipe among Syrian Christians in Kerala.We used to make Beef Ulathiyathe,Beef curry or beef pickle.Here comes the recipe for Nadan Beef Ulathiyathe.
- Beef - 1 Kg
- Onion - 1
- Green Chillies - 3
- Ginger - 1 medium piece
- Garlic - 2-3 pods
- Curry leaves - a few
- Chilli powder - 1 Tsp
- Turmeric powder - 1/4 Tsp
- Pepper powder - 1/2 Tsp
- Meat masala- 1 Tsp
- Garam masala - 1/2 Tsp
- Fennel/Perum Jeerakam - 1/2 Tsp
- Salt - to taste
- Coconut Oil - 3 Tb sp
- Water - 1/4 cup
- Coconut kothu - a few
- Curry leaves - 2 sprigs
1.Clean and cut beef into small pieces.
2.Add little turmeric powder and few drops of lime juice/vinegar + salt and keep aside or in fridge for some time.
3.Cook the beef with little salt,water and meat masala in a pressure cooker for 3 -4 whistles.
3.By this time prepare the masala,take a pan and switch on the flame.Add oil when it gets warm add chopped onion and saute well.Cook until the onion becomes transluscent. Add chopped ginger and garlic along with a few curry leaves and chopped green chillies. Saute everything and fry.
4.Reduce the flame to low level and add all the masala powders in the ingredient list.Mix all and saute it in order to make a dry masala.When the raw flavor of masala goes and the oil becomes clear,add the cooked beef to the dry masala with little gravy from the cooked beef(1/4 cup).Add required quantity of salt.stir fry the beef for 15-30 minutes until all the masalas blend together with beef.
5.Main ingredient needed for turning this dish into a lip smacking is Coconut oil.When almost all the gravy in beef curry evaporates(pattiche),sprinkle 1 Tb sp of coconut oil and fry the beef.It will turn into black coloured beef roast.
1.Add masalas according to your hot taste.
2.If you like,Add coconut kothu along with beef and fry it.
3.Main ingredient needed for turning this dish into a lip smacking is Coconut oil.When almost all the gravy in beef curry evaporates(pattiche),sprinkle 1 Tb sp of coconut oil and fry the beef.It will turn into black coloured beef roast.
4.If you need more hot,add red chilli flakes or instead of adding red chilli powder add red chilli flakes.
Beef Roast is ready to serve.Have it with rice or Kappa...
