Chicken Tikka Masala is a trending restaurant favourite dish which is mild spicy but delicious food served with flat breads,parathas,fulkas and chapathi both liked by Indians and foreigners.Here im showing the preparation method using cashews as creamy substitute and shows both oven and pan frying methods.
Things Needed
1.Chicken Breast - 2 pieces
2.Ginger -garlic paste - 1 Tsp
3.Turmeric powder - 1/2 Tsp
4.Kashmiri Chilli powder - 1/2 Tsp
5.Salt - 1 Tsp
6.For gravy,
big onion chopped - 1
Tomato sliced - 1
Ginger - garlic chopped - 1 tb sp
7.Masalas needed
Turmeric Powder - 1/2 Tsp
Kashmiri Chilli Powder - 1 Tsp
Coriander powder - 2 Tbsp
Garam masala - 1 Tsp
Salt - 1 Tsp
Add dried Kasthuri methi/fenugreek leaves - a few pinch
Cashews - 1 handful soaked and grind to a smooth paste
Method
1.Clean and cut chicken into small pieces
2.Mix well Refrigerate for 30 minutes.
Here im showing 2 methods for cooking chicken.
1st method
1.Shallow frying in pan.
2.Cover and fry for 10 minutes in medium flame
3. Flip it for even cooking make a cut and check if its cooked or not (white colour means its cooked)fry until this brown spots forms and transfer it to plates.
Method 2
- Grease a baking pan with oil.
- Bake chicken in Oven .
- Arrange marinated chicken in greased pan.
- Bake in preheated oven at 350 Degree F for 15 minutes.
- Make gravy with onion and ginger garlic chopped in a big pan.
- Chicken is baked and broil it for 1 minute.
- Add Tomatoes when oil becames brown.
- Add all masalas to the onion mix and saute it in low flame.
- Add dried fenugreek/methi leaves.
- When it cools ,grind it Make a fine paste by grinding for 2 times and it should be silky smooth.
- Mix already cooked chicken together with masala paste.
- Cover and cook for 5 minutes to blend
- Grind and make a smooth paste of cashew nuts which was soaked for 10 minutes
- Add cashew paste to the chicken gravy and cook in low flame for 5 minutes
- Add few dried fenugreek/methi leaves for extra flavour
- Mix well and transfer it to plates
- Serve hot with chapathi,paratha or naans
