Kerala style White lemon pickle is unique in taste and flavour and i liked it and thought to share with you all.

Things Needed
1.Lemon - 4 big or use small lemons - 10 nos
2.Chopped Ginger - 3Tbsp
3.Chopped Garlic - 3 Tbsp
4.Chopped Green Chillies - 6 nos
5.Curry leaves - 2 sprigs
6.Salt - to taste(2 Tsp)
7.Mustard seeds - 1 Tsp
8.Turmeric powder - 1 pinch
9.Asafoetida - 1/4 Tsp
10.Fenugreek powder - 1/4 Tsp
11.Gingely Oil or vegetable oil
Method
1.Steam lemon for 10 minutes and cut into small pieces.
2.Add 3 Tbsp Gingely Oil to a clay pot and splutter mustard seeds.
3.Add chopped ginger and garlic and fry for few minutes in medium flame.
4.Add chopped green chillies or dry red chillies if you like.
5.Add curry leaves,turmeric powder,Asafoetida and fenugreek powder-1/4 Tsp each.
6.Add 1 cup hot water and 1Tbsp White Vinegar and boil.
7.After boiling,add steamedlemon pieces.
8.Add 1Tbsp Sugar to reduce the bitter taste.
9.White lemon pickle is ready.Use after 2 weeks for good taste
