Mango Semiya Payasam

Today I'm so happy as im entering into 5th year of food blogging.Though i'm not a frequent blogger I tried my best to come out with some Kerala taste.Thank you so much for your love and encouragement and i wish to hear more feedback from you guys.
We celebrated Kerala New Year called Vishu and my blog anniversary together on last weekend with a tasty Mango payasam,which is entirely my own recipe.Its as simple like semiya payasam.So lets go into the details without wasting any time.
Recipe type : Dessert
Preparation time :5 minutes
Cooking time:30 minutes
Cooling time : 20 minutes
Serves:3-6
Ingredients needed
1.Milk - 4 cups
2.Vermicelli - 1 small packet
3.Sugar - 1 cup
4.Cardamom powder(3-4 nos,powdered)
5.Ghee - 2 Tb sp
6.Cashew nuts - 10-15 nos
7.Raisins - 10-15 nos
Method
- In a non stick pan,shallow fry nuts and raisins in pure ghee until it becomes golden brown.
- Drain out the fried items and add vermicelli or semiya and fry this too until golden brown.
- Mean while, make cardamom powder by grinding cardamom seeds with lit sugar.(avoid those pods).
- When the vermicelli turns golden brown,add milk and allow it to boil.Stir gently and When it starts boiling,add sugar and stir gently.
- Reduce the flame and stir gently until the milk becomes thick.By this time you can add powdered cardamom for a nice aroma.
- When the milk boils completely continue stirring in low - medium flame until it gets a thick consistency.
- Switch off the flame after 10 minutes and kept aside for complete cooling.
- Clean and cut fully ripe mango and make a puree in a blender/mixxie.
- Cook this puree for 5 minutes or until it starts bubbling.
- Switch off the flame and keep that pan aside for cooling.
- When both mixtures(semiya payasam n mango puree) cooled completely,mix puree into that payasam and stir gently and mix it nicely until it becomes creamy.
- Garnish with fried cashews and raisins and serve warm or cold.
Notes
- Use whole milk or 2% milk and please don't add water.
- You can also add sweet condensed milk instead of sugar.
- Stir continuously in order to avoid the over heating of semiya and milk or else milk will be burn.
