Ghee Rice
One of the most simplest and easiest one pot recipe.It's a popular dish in Malabar region in Kerala for their weddings and other ceremonies similar like Biriyani.But this Ghee rice is not complicated like Biriyani and its super easy.It needs a spicy gravy to go along with it. I prepared Chicken Roast as a combination curry for Ghee rice.Let's learn the easy one pot method of preparation of Ghee rice.

Ingredients needed
Basmati rice - 2 cups
Onion - 1 big or 2 small thinly sliced
For the seasoning
Ghee/Clarified butter - 2 tbsp
Cinnamon - 2 inch piece
Cardamon - 2
Cloves -3
Bay leaf -2
Star anise -2 (optional)

Ingredients needed
Basmati rice - 2 cups
Onion - 1 big or 2 small thinly sliced
For the seasoning
Ghee/Clarified butter - 2 tbsp
Cinnamon - 2 inch piece
Cardamon - 2
Cloves -3
Bay leaf -2
Star anise -2 (optional)
Preparation
Clean and wash rice in water 2-3 times and Soak Basmati rice in water for 20 minutes. Then drain the water and keep it aside.
Method
1.Heat ghee in a pan, add all the spices,(cinnamon, cardamom,cloves,bay leaf and star anise) then add onions and fry till they turn golden brown.
2.Now add the drained rice and fry for a few minutes.
3.Add 4 cups of boiling water, needed salt and cook until rice is done.(Add water according to the instructions in rice packet)
4.When rice is done fluff it with a fork and serve hot(Also you can add more ghee at this time to the warm rice for added flavor) with any spicy gravy veg or non veg.Here I have used Chicken Roast,onion raita and pickle.
Note
- You can pressure cook rice for 1 whistle or cook it in a rice cooker or in a pan with a tight lid.
- Fry cashew nuts,raisins and sliced onions in ghee and garnish ghee rice with it.
- You can also add chopped cilantro and mint leaves for flavor.
