Grape Squash Recipe ---pure home made
Grapes are world's healthiest food which can be have as such or in the form of juice,jam,wine and other bevarage. Yesterday my brother brought some farm fresh grapes from a grape vineyard near Kambam,Tamil Nadu.So thats the idea behind making grape juice.Myself n my mom had decided to make Grape Squash and Grape wine.I'll post the recipe of Grape wine soon.
Now i'm going to discuss about the Grape Squash recipe.This is pure home made recipe and can be given to our kids far better than store bought ones which are rich in preservatives.In this home made recipe i only used citric acid(lemon)and sugar as preservative.No added colors, flavors or anything.For this preparation use good quality grapes which are sweet in taste,mostly red ones.Black grapes are normally used for making wine.But here red and black mixed grapes are only available and i got the same grapes.
Also keep the grape squash in a plastic container like ice cream box and store in freezer.when you think about to have a grape drink or when you have guest,take 2 scoops of frozen squash and add water to make it as juice.Please don't keep the squash in refrigerator(lower side) since the grape squash will ferment after 2 or 3 days of preparation.
Things you needed
Grapes: 1/2 kg
Sugar: 1 to 1-1/2 cups,if you need more sugar,add later
Lemon: 1.
Water: About 2.5 cups.
Preparation method
1.Clean grapes thoroughly in running tap water and keep the grapes in salt water for 30 minutes in order to remove pesticides.
2.Boil cleaned grapes in 2 cups water.(Use steel container and large spoon for easy handling).Keep in high flame until the water boils.
3.When it starts boiling,reduce the flame to low and keep on stirring.When the water starts bubbling,grapes will cook and the juice comes out which in turn changes the colour to violtish red or grape colour.Boil until steam comes out from the liquid almost 15 minutes and switch off the flame.
4.Using a juicer or mixxie/blender spin once the cooled grape juice in order to get complete juice from boiled grapes.Don't spin too much,it will grind the grape seeds which results in bitter taste.
5.Seive the spinned grapes for getting the juice content using a strainer.Check whether the sugar level of the juice.If its sour,add more sugar(Make a sugar syrup(1/2 cup water for 1 cup of sugar)Add this sugar syrup to the juice and boiled again.Brown bubbles and foams will float at the top level,if there is any impurities in the sugar.Remove that floating foam with a spoon.
6.After this boiling the colour of the juice becomes more dark.when it gets cooled add the juice of 1 lime.
7.Store this juice in a plastic container and keep in freezer.You can use it with a spoon or scoop and add enough water when you need grape juice.

3.After boiling,juice will be like this.
4.Strain out the boiled grapes.
5.After Straining,Juice will be like this.
6.Check the sugar level and if needed add sugar syrup and boil once more.By this time we can remove all those floating sediments.
7.Transfer the juice to plastic container and store in freezer and use when needed.
