Avocoda Muffins
Who ever is looking for a healthy break fast idea c'mon!! here is an easy recipe for you with ripe avocadoes.Fed up with Avocado sandwich, and smoothies try out this easy recipe.Let's jump into the recipe right away.
Ingredients Needed
1.Avocado - 2 ripe
2.All purpose flour - 1 cup
3.Whole wheat flour - 1 cup
4.Baking powder - 2 Tsp
5.Baking soda - 1/2 Tsp
5.Salt - 1 Tsp
6.Eggs - 2
7.Milk - 1/2 cup
Preparation Method
1.Mix all powders together and seive it.
2.Scoope out those ripe avocadoes to a bowl.
3.Mash it with a fork initially.
4.Add 1 cup sugar and blend.
5.Scrape down with a spatula.
6.Add 1 egg and blend it with a beater/whisk.
7.Add 2nd Egg and beat again.
8.Add Vanilla essence 1 Tsp and beat again.
9.Scrape down with a spatula.
10.Add dry powder mix to the wet mix.Fold gently with a
spatula and then with a beater.
11.Add flour again and repeat the Process.
12.Fold it with a spatula and then use Beater.
13.Finally loosen the batter with milk.
14.Final gentle folding.
15.Preheat oven at 350 Degree Fahrenheit.
16.Arrange cupcake liners in muffin tray.
17.Divide 1/3 rd of batter to another bowl and add 1 Tbsp
cocoa powder and mix gently.
18.Use an icecream scoop and transfer the batter to the
liners evenly Or use 2 spoons for transferring.Fill ¾ th of the liner with
batter. Don’t over fill.
19.Tap the tray for avoiding air bubbles.
20.Bake in a
preheated oven at 350 Degree Fahrenheit for 20 Minutes.
21.Moist and soft Avocado muffin is ready.

Notes
- Don't over mix the batter and over fill to the liners.
- Also if you like add butter for extra moisture but its not needed.
- Use All purpose flour if you don't have whole wheat flour which i have added for healthy purpose.
