Finally Fall has arrived in Texas too with freezing cold late night and its time of the year where Nature's golden play happens.Fall is the harvest season too and Pumpkin is Fall's fav vegetable and offcourse apples among fruits.Our kids are really excited with amazing golden colours of nature,cool breezy weather,Pumkin patches,Trick o Treats and colourful Halloween parades at schools.Not only kids I'm also excited with colourful nature.Since our 1st home in USA was in New Hampshire( I can literally say we were raised in NH)we both fall in love with that amazing colours.So every year we tried to visit fall locations even though we moved towards South,Texas.

This year we had an awesome view of Fall in New Mexico,I'm sharing few fall pics here.Its the RAW image without any photoshop editing.

Anyway Let's go through our today's recipe Pumpkin Bread.Main flovoring agent is the Pumpkin pie spice which is available in all grocery shops or you can make it easily at home with dried ingredients.



Ingredients



  • All purpose flour/maida - 2cups
  • Baking powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Salt - 1/4 tsp
  • Pumpkin spice  - 2 Tb sp
  • Eggs - 2
  • Cooked Pumpkin puree - 1 cup[Cook pumpkin pieces in a pressure cookker for 2 whistles,mash it and make puree.]
  • Sugar - 1.5cups
  • Oil/butter - 3/4 cup
  • Roasted pumpkin seeds/Chopped nuts/tutti frutti - 1/4 cup(optional)

Pumpkin Spice Mix

Dried ginger powder - 2 Tsp
Cinnamon powder - 3 Tsp
Clove powder - 1/2 Tsp
Nutmeg powder - 2 Tsp
All spices -1.5 cups

Grind all together in a small mixxie jar and keep it in a clean glass bottle with lid.



Method
1.Measure the flour using a measuring cup and add  to a mixing bowl.
2.Add 1 tsp Baking powder and 1/2 tsp Baking soda to the measured flour and sift the dry powders using a fine strainer in order to mix all the dry ingredients properly.
3.Take another bowl and add 3/4 cup of butter(melted) or oil and 1.5 cups of  powdered sugar.Mix sugar and butter using a whisk or hand mixer.
4.Add eggs 1 by 1(1 at a time) to the sugar - butter mixture and mix properly.
5.When all the eggs are mixed thoroughly add 1 cup Pumpkin puree and mix using a spatula.
6.When the liquid ingredients are mixed properly,add the measured  dry powders to the egg-butter-sugar mixture.
7.Mix the powder slowly and carefully to form a batter.Don't mix too much.
8.Coat tutti fruity(here i have added dried cranberries too) with remaining flour and added to the bread batter.
9.Now Preheat the oven to 300 to 350 Degree F.
10.Grease(apply butter)to an Oven safe dish(loaf pan). Also apply butter using a brush evenly to the sides of the dish.Add some all purpose flour or maida to the greased dish and make it even.Remove the excess dust by  tilting the dish.[or simply keep a butter paper or foil paper for easy cleaning]
11.Add the prepared bread batter first to the dish and spread it evenly with a spatula.
12.Transfer the batter dish to the preheated oven and bake the bread for at least 45 -60 minutes at 300-350 Degree F.
13.After 60 minutes,use a toothpick to check whether the bread is done.If the tooth pick comes out clean it means the bread is well baked.Try to insert the tooth pick at  the center of the bread,because center portion needs more time to bake.
14.Enjoy this pumpkin bread with tea or coffee or even  as break fast with butter or cream cheese or simply as such.




Tips
1.Measure the dry powders correctly,its the key point of making a good cake.
2.Add and whisk eggs(one at a time).
3.Pre heat the oven when all batter is ready.No need to pre heat at the beginning before you start.So when everything is ready,you can directly place inside oven.
4.After adding the dry powders to the egg-butter-sugar mixture,mix everything very gently and softly,only with a spatula or wooden spoon  and do not mix for long time.
5.After pouring the batter to the dish completely,try to tilt the dish to all the four sides,to avoid and reduce the formation of air bubbles/space in the batter.This will help to avoid the breakage of cake at the center when it is done.

6.Finally for an extra sweetness and glaze,you can add milk cream(prepare it by mixing powdered sugar,milk and 2 pinches of corn flour in a pan.)Pour it over the bread.Enjoy this delicious treat of Pumpkin..I'm sure this will be a great hit in your house and your kids simply love it.
