GOTHAMBU (BROKEN/CRACKED WHEAT) PAYASAM

THings needed
- Broken wheat - 1 cup
- Water - 4 cups
- Jaggery - 500 gms
- Water - ½ cup
- Medium thick coconut milk - 2-3 cups
- Thick coconut milk - 1/2 - 1 cup
- Crushed Cardamom - 3(use only seeds and remove pods)
- Ghee - 3 tsp
- Cashew nuts- ¼ cup
- Raisins - ¼ cup
- Thengakothu (bite size coconut pieces) - ½ cup
Method
- Wash and clean the cracked wheat and Soak it in water for 30 mins.Then pressure cook this cracked wheat with 4 cups of water for 3 whistles.
- Mean time,melt jaggery in a pan with little water.
- Heat a heavy bottom pan(uruli),add lit ghee and add strained jaggery syrup.
- Add cooked wheat to the jaggery syrup and mix gently.
- Add medium consistency coconut milk and heat this until boils.Gently stir the content in order to avoid the sticking at the bottom.
- When it starts boiling,reduce the flame and stir gently for 2-3 minutes.Add cardamom powder and finally add thick coconut milk and stir gently for 1 minute.Switch off the flame and (move out the pan to the counter top if you are using a coil).
- Check the sugar level and colour of the payasam.If you need more,you can add more...The colour of the payasam purely depends on the colour and type of the jaggery.
- Heat another pan,add ghee and fry coconut pieces(thenga kothe),cashews and raisins.Add this fried items to the payasam.

Notes
- Always stir gently while making any payasam in order to avoid the sticking to the bottom.
- Use fresh coconut milk for good taste.
- This wheat payasam get thickened while sitting more time.So try to have this on the same day.Or if you are having on the next day,add hot milk to loosen it.
- Also you can add cow's milk to this cooked wheat and make a porridge for kids with sugar which helps them to gain weight.
How to get coconut milk from fresh coconut.
- Use 1/2 of a fresh coconut and grind this fresh grated coconut in a mixxie to form a paste.seive this paste and collect the milk(this is thick enough and called as 1st milk).
- Add luke warm water to the seived coconut and grind again.Seive for the 2nd time and you get the medium consistency coconut milk and called as 2 nd milk.
- Again add luke warm water to the seived coconut and grind again for 30 sec.Strain again this and you will get thin coconut milk called as 3rd milk.
